Vanilla coffee apples

Notes & tips

The soft core of Royal Gala apples is edible. If you want to remove it, use a 1cm cutter to cut out before cooking.


Ingredients


(serves 4)


  • 1 vanilla bean, cut in half lengthwise

  • 2 tablespoons instant coffee granules

  • 1 cup caster sugar

  • 4 Royal Gala apples, unpeeled, cut into thick slices (see note)

  • olive oil cooking spray

  • honey-flavoured yoghurt to serve
     
Method

Preheat oven to 200°C. Using a sharp knife, scrape seeds from vanilla bean. Place vanilla seeds and bean, coffee, sugar and 3 cups water in a large saucepan. Stir over low heat for 3 to 4 minutes or until sugar dissolves. Bring to the boil over high heat. Reduce heat to medium-low and simmer for 10 minutes or until syrup reduces by half.

Meanwhile, heat a chargrill or frying pan over high heat. Lightly spray both sides of apple slices with oil. Cook, in batches, for 2 minutes each side or until light golden. Transfer to a baking tray and bake for 8 minutes or until tender.
Place apples into bowls and spoon over syrup. Serve with yoghurt.
