Some Coffee Pancakes
You could add orange brandy to the filling of these pancakes for a special occasion dessert.
Ingredients
Serves: 4
- 100 Gram Plain flour (3 1/2 oz)
- 1 Teaspoon Instant coffee granules
- 1 Egg, beaten
- 300 ml Milk ( 1/2 pint)
- Butter, to fry
- 3 Oranges
- 2 Teaspoon Cornflour
- 2 Tablespoon Clear honey
- 3 Bananas, peeled and chopped
- Greek style yogurt, to serve
- Chopped pistachio nuts, to serve
Method
Place the flour and coffee granules in a bowl. Gradually stir in the egg and milk to form a smooth batter.
Heat a little butter in a frying pan, when hot pour in 3 tablespoons batter, tilting the pan to cover the base. Cook until the pancake moves freely, turn and cook until golden. Repeat to make 8 pancakes and keep warm.
Zest the oranges, peel and segment, catching the juice. Mix the juice, cornflour and honey and heat in a small pan until thickened. Stir in the fruit. Fold the pancakes into triangles and fill with the fruit. Serve with the yogurt and nuts.

Ingredients
* 2 tbs instant coffee
* 11/3 cups (200g) self-raising flour
* 1 tsp baking powder
* 1/2 tsp bicarbonate of soda
* 1 tbs caster sugar
* 1 egg
* 200g Greek-style yoghurt, plus extra to serve
* 200ml milk
* 40g unsalted butter, melted, plus extra to brush
* Breakfast fruits any that you would like
* Icing sugar, to dust
Method
Mix the instant coffee with 2 tablespoons of boiling water and set aside to cool. Sift the flour, baking powder and bicarbonate of soda into a bowl. Add the sugar and a pinch of salt. In separate bowl, use a wooden spoon to beat the egg, yoghurt, milk, butter and coffee until combined. Add to dry ingredients and stir gently to combine. Heat a non-stick frypan over medium heat and brush with some of the extra melted butter. Working in batches, add 1 tablespoon of batter to the pan for each pancake. Cook until bubbles form on the surface, then turn and cook for a further 1 minute or until golden. Cover and keep warm while you repeat with remaining batter, brushing the pan with extra butter as needed. Serve the pancakes in stacks with breakfast fruits and extra yoghurt. Dust with icing sugar.
Notes & tips These pancakes work just as well for dessert, drizzled with chocolate sauce. Be sure to make the pancake batter just before cooking.
