Present day uses for coffee as an ingredient in cooking recipes has focused more on dessert dishes with very few main course options, but that is changing, for example one of the secret ingredients in famous chili recipes is a cup or two of brewed freshly roasted coffee.

Chili (Mexican Style) with Smoked Chapolte Peppers




Ingredients:


  • (1) to (2) tbsp vegetable oil

  • (1½ lb) ground beef

  • (1) lb ground pork

  • (2) chopped spanish onions

  • (3) red peppers chopped

  • (1) orange pepper chopped

  • (2) cups sliced mushrooms

  • (5) garlic cloves finely chopped

  • (1) jalapeno pepper chopped

  • (1-2) tbsp chili powder

  • (1/2) tsp cayenne pepper

  • ( 6 ) Chapolte peppers from the can, chopped

  • (1) tbsp oregano leaves ground

  • (1) tsp cumin ground

  • (1) tsp salt

  • (1/2) tsp cinnamon

  • (2) bay leaves

  • (3) cans plum tomatoes roughly chopped, and put back in their juice

  • (2) cups freshly roasted (medium roast) and brewed Macaw coffee (Mexico)

  • (1) can kidney beans, rinsed and drained

  • (1) can pinto beans, rinsed and drained

  • (1) can black beans, rinsed and drained

  • (2) tbsp vinegar

  • (1) cup chopped (fresh if available) coriander
Instructions:

Heat oil in a large saucepan over medium heat. Add beef and pork, when the meat is browned, stir in onion, peppers, garlic, jalapeno, chapolte, mushrooms, cayenne, chili, oregano, cumin, salt, cinnamon and bay leaves. Cook for about 5 minutes until vegetables soften slightly.

Stir in tomatoes with juice. Stir in coffee, beans and vinegar. Increase heat and stir frequently until brought to a boil. Reduce heat and simmer uncovered, stirring occasionally, until chili is about as thick as you like, approximately 1 hour. Discard bay leaves and stir in coriander.

Toppings: Grated Monterey Jack cheese, sour cream, diced advocado, chopped jalapenos and fresh coriander.

Makes approximately (10) servings


Chili



Add (3) cups of Fresh Roast, Fresh Brewed Coffee to your favourite Chili Recipe and let simmer.

Here is recipe for vegetarian chili.

Serves 4-6


  • 1 tablespoon (15 ml) canola oil

  • 1 tablespoon (15 ml) garlic chopped

  • 1 cup (250 ml) each of coarsely chopped celery, sweet red pepper, onion, carrot, mushrooms

  • One 28-ounce (796 ml) can of crushed tomatoes

  • One 28-ounce (796 ml) can of diced tomatoes

  • 2 tablespoons (25 ml) Worchestershire sauce

  • 1 tablespoon (15 ml) white vinegar

  • 1 tablespoon (15 ml) chili powder

  • 1 teaspoon (5 ml) crushed chili (optional)

  • 1 teaspoon (5 ml) each of: brown sugar, dried basil, garlic powder, salt, ground pepper, cumin, dried oregano

  • 1 bay leaf

  • 3 cups (625 ml) fresh strong coffee

     
  • Three 19-ounce (540-ml) cans of salad bean mix (or 1 can each of red kidney beans,Black eye peas, fava beans)

  • Sour cream to garnish

  • Monterey Jack cheese, grated, to garnish

  • Fresh coriander, to garnish
Instructions:

1) In a 4-quart (4 litre) stockpot or Dutch oven, add canola oil and sauti chopped Garlic and celery, sweet red pepper, onion, carrot, mushrooms until soft, about ten minutes.

2) Add diced and crushed tomatoes, all seasonings and coffee; simmer another ten minutes.

3) Drain the canned beans, then add beans to pot and cook 5 minutes longer.

4) To serve, ladle chili into bowls and top with a dollop of sour cream, grated cheese and fresh coriander.

Serve with warm corn bread.



Pasta Sauce



Ingredients:

  • (1) pound lean ground beef (per (1/2) pound Pasta)

  • (3) Spanish onions, finely chopped

  • (4) cloves of garlic finely chopped

  • (5) tomatoes finely chopped (or a can of tomatoes)

  • (1) can (small) tomato paste

  • (1) cup freshly brewed Macaw coffee (Any "Origin" you prefer)

  • (3/4) lb of mushrooms chopped

  • (1/2) lb sweet red pepper

  • (1) tbsp chili pepper

  • (2-4) tbsp olive oil

  • (1) tsp sugar

  • (1) tbsp oregano

  • Salt and pepper as you wish

  • Dash of red wine

  • Parmesan cheese, grated
Instructions:

Brown onions and garlic in olive oil. Add ground beef and brown. Add tomatoes, tomato paste, mushrooms, red peppers, coffee, sugar, red wine, and chili pepper. Simmer for 30 minutes to 1 hour, add oregano salt and pepper.
Serve with your favourite Pasta.

If you have a favourite sauce recipe, add the (1) cup freshly brewed coffee and enjoy.


Baked Ham



Ingredients:


  • Per (4) lbs of Ham

  • (1/2) cup honey

  • (2/3) cup freshly brewed Macaw coffee dark roast "Origin" Colombia

  • (1) tbsp cinnamon

  • (1) pinch of ground cloves

  • (10) whole cloves

  • (1) small jar apricots in syrup

  • (1) small jar cherries in syrup

  • Dash of cream

  • Tooth picks

  • Maraschino liqueur or Cognac/Brandy
Instructions:

Preheat oven to 375 Farenheit. Wrap ham in aluminum foil.

Roast for (2) hours.

Prepare glaze by first melting honey, then add coffee, cinnamon, ground cloves, then reduce for about ten minutes.


Swedish Meatballs



Ingredients:


  • 1 cup chopped onion

  • 3 tablespoons butter or margarine

  • 1 beaten egg

  • 1 cup light cream

  • 1 = cups soft bread crumbs

  • < cup finely snipped parsley

  • 1 < teaspoons salt

  • Dash pepper

  • Dash ground nutmeg

  • Dash ground ginger

  • 1 pounds ground beef OR > pound ground beef & = pound ground veal & < pound ground pork

  • 2 tablespoons all-purpose flour

  • 1 teaspoon instant beef bouillon granules

  • 2 teaspoons finely ground medium/dark fresh roast coffee

  • 1 < cups water
Preparation:

Cook onion in 1 tablespoon of the butter or margarine till tender.

In mixing bowl combine egg and cream; stir in cooked onion, bread crumbs, parsley, salt, pepper, nutmeg and
ginger.

Add meats. Mix well by hand or electric mixer.

Shape into > -1 inch sausage like rolls, wet hands before shaping, cut into I inch segments, and round in
the palm of your hand.

In a large skillet brown the meatballs, half at a time, in 2 tablespoons of butter; remove from skillet.

Stir flour, bouillon granules, and coffee into pan juices; add water cook and stir till thickened and bubbly.

Add meatballs. Cover; simmer about 30 minutes, basting meatballs occasionally.

Makes about 60 appetizer meatballs.

* Add 2 teaspoons of fine grind Fresh Roast Coffee (Medium/Dark) to this Swedish Meatball recipe, when forming the meatballs prior to placing on the baking sheet. Sheila says the coffee makes all the difference between "OK" and "Great" tasting meatballs.
