Coffee Drop Cookies with Coffee Cream Cheese Frosting
Ingredients:
* 1 c. sugar
* ½ c. shortening or butter, softened
* 2 c. flour (+)
* 1 egg, well beaten
* 1 tsp. vanilla
* ¾ c. cold coffee (brew double strength for more coffee flavor)
* ¼ tsp. salt
* ½ tsp. baking soda
* 1 tsp. baking powder
* ½ c. chopped nuts
* ½ c. raisins
* ½ tsp. cloves
* ½ tsp. cinnamon
Cream shortening and sugar. Add egg. Mix thoroughly. Sift flour, measure, and sift together with baking soda, salt, baking powder and spices. Add alternately with coffee to creamed mixture. Add raisins, nuts, and vanilla. Mix thoroughly. Add additional flour if necessary to make a drop cookie dough (approx 4 tablespoons). Drop by teaspoonfuls on to well-greased baking sheet. Bake at 400° for about 15 minutes. Cookies should be slightly flat when done, but watch the edges carefully or they may burn. Allow cookies to cool completely before frosting. Makes 3 dozen.
Frosting:
- 8 T. cream cheese, chilled
- 5 T. butter, softened
- 1 tsp. vanilla
- 2 - 2 ½ c. powdered sugar
- 3-4 T cold coffee (brew double strength for more coffee flavor)
Mix cream cheese, butter, and vanilla until just blended. Add powdered sugar alternately with coffee until desired consistency is achieved. Chill frosting in refrigerator for at least 30 minutes.
